Chipotle Chickpea Smash sandwich!
- 1 29 oz can of chickpeas
- 1/3 cup Chipotle Veganaise
- 3 Tbs Umeboshi Vinegar
- 1 Tbs celery seeds
- 3 ribs celery chopped
You can either do this my hand or in a blender. If you do it in a blender combine all the ingredients and pulse a couple times. If you are doing it by hand, use a large bowl to smash the chickpeas with a fork. You want some to remain whole, and the rest smashed so you get a nice consistency. This is the same when blending. You don’t want it to be just mush. After smashing add the rest of the ingredients and mix together. Serve on some bread smeared with extra chipotle veganaise, and some greens, like spinach shown above. Enjoy!
This recipe makes 6 sandwiches. I like to make a big batch so it lasts a couple days. If you want a smaller amount, you can half the recipe and use a 15 oz can of chickpeas instead. Dennis loves this stuff, and likes to be able to have it in the fridge ready to put on some bread when I am not around!
This is the most delicious massaged kale salad dressing. It is very flavorful, and will have you wanting it every night of the week. I have it pictured here with some Red Lentil Thai Chili.
In a blender combine the following ingredients and blend until smooth.
- 1/4 cup mellow white miso
- 3 Tbs maple syrup or agave
- 1/4 cup tahini
- 2 Tbs Tamari or Bragg’s liquid aminos
- 1 tsp minced fresh ginger
- 1/2 cup water
Massage dressing into one large bunch of kale. You may have some leftover dressing, which you can store in the fridge for a couple of days. After massaging, you can add extra toppings, we like to add dried cherries, and either pecans or slivered almonds. Enjoy!
